I purchased a loaf of rye cocktail bread to make Sausage and Cheese on Rye one morning when we had company. It is an easy, yummy recipe that works great for breakfast, brunch, or as an appetizer.
Recipe: Sausage and Cheese on Rye
Ingredients
- 1 lb. roll or bulk sausage
- 1 loaf rye cocktail bread
- 1 jar Cheese Whiz
- sm. amount of butter
Instructions
- Preheat oven to 375.
- Cook sausage in skillet until well done.
- Lightly butter 13 X 9 baking dish.
- Line dish with cocktail bread slices side-by-side.
- Cover bread with drained sausage.
- Place Cheese Whiz in all over sausage/bread (it will spread to even out some).
- Bake until cheese is well melted, about 10 – 12 minutes.
- Cut using bread slice placements as guides.
- Serve warm.
After making the sausage dish, I still had about two-thirds of the loaf of rye cocktail bread left. I decided to try making little Reuben and Rachel sandwiches.
They turned out to be very tasty and would work well for entertaining or having a few for lunch or dinner.
Recipe: Rachel and Reuben Sandwiches
Ingredients
- rye cocktail bread
- turkey and/or corned beef, from deli
- Swiss cheese slices
- Cole slaw and/or sauerkraut
- Thousand Island Dressing
- easy spread butter or margarine
Instructions
- Lightly butter one side of desired number of slices of cocktail bread.
- Cut up deli meat and cheese into bread sized piece or small enough to be folded onto bread.
- Place cheese and meat on the non-buttered sided of slice of bread.
- Place in very warm skillet. Add sauerkraut if making a Ruben.
- Place second slice of bread on top with butter facing out.
- Cook until both sides are lightly browned.
- If making Rachel, add cole slaw on top of turkey after removing from skillet.
- Serve both with Thousand Island Dressing.
