I have already shared the recipe for my dad’s pimento cheese. We called his (and most others) “pimento cheese salad” as it was very similar to ham salad. It is still my favorite, especially for sandwiches. However, I have also discovered some good “pimento cheese spreads” here in the South.
To me, and probably only me, the distinction between calling pimento cheese a “salad” or a “spread” is the simply the number of vegetables. A salad it will have pickles and/or other veggies with the pimentos. A spread will only have pimentos. However, it all can simply be called just pimento cheese.
I decided to try a replicate a local restaurant’s pimento cheese spread after a disastrous dining experience on my birthday that was so bad that even my nine year-old vowed never to go back. 🙁 We really like their pimento cheese…just not enough to endure another dining experience like that one.
