Peanut butter oatmeal bars are an easy and quick treat to make. They are a great to serve family gatherings and potlucks. Print This! Recipe: Peanut Butter Oatmeal Bars Ingredients: 1/2 c. unsalted butter 1/2 c. granulated sugar 1/2 c. brown sugar 1 egg 1/3 c. peanut butter 1/2 tsp. baking soda 1/4 tsp. salt 1/2 tsp. vanilla 1 c. flour 1 c. quick cook rolled oats Topping: 1 c. semi-sweet chocolate chips 1/3 c. confectioner’s sugar 1/3 c. peanut butter 2 – 3 Tbsp. milk 1 tsp. vanilla dash of salt Instructions: Preheat oven to 350 degrees F. Cream together butter and sugars. Beat in egg, peanut butter, baking soda, salt and vanilla. Stir in flour and rolled oats by hand. Spread evenly in a 9 X 13 greased pan. Bake for 20 – 25 minutes. Sprinkle with chocolate chips upon removing from oven. Wait for chocolate chips to melt to spread the chocolate evenly over the bars. Meanwhile, mix the toppings sugar, vanilla, and salt in a small bowl. Add milk a tablespoon at a time until a looser consistency is obtained. Put peanut butter mixture in a zippered plastic storage bag toward one corner or in a pastry bag. Clip corner or end of bag and pipe peanut butter topping in a zigzag or circular pattern on top of the chocolate. Use a bamboo skewer or toothpick to drag through the peanut butter into the melted chocolate to make a swirl or other decorate pattern. Cut into serving size bars.
