I have a confession: I find these canapes (or whatever name you prefer) addictive and I am not that much of an onion fan. Seriously, I find it very difficult to stop eating them once I start…kind of like the potato chip commercial that proclaims “you can’t just eat one”.
My mom made something very similar when she hosted one of her women’s groups and they were always popular. However, I have not been able to locate her recipe. So, I just came with my own version…it does taste very similar to what I remember of her appetizers.

This is the “upscale” version of something my sister introduced me to. In hers, you cut shapes out of regular sandwich bread with cookie cutters, mix together mayo, parmesan, minced onion, and whatever herbs, etc. you like – toast the bread one one side under the broiler, flip and spread the mayo mix on the other side and pop under the broiler again until bubbly and golden. It sounds silly for what it is, but there are a LOT of things I’ll pass up just to eat more of these, they’re sooooo good. Love that yours must be crunchy with the baguette, where these are light and crispy.
