A recent camping trip has inspired me to do a series of recipes that you can make over or in a campfire…or in a kitchen.
Our last night camping, we had what I call a “foil dinner.” Each of our easy classic campfire dishes were cooked by wrapping them in foil and placing them in the campfire coals. We had foil turtles, corn on the cob, and banana boats.
Life is short, so I thought I would start with dessert. Banana boats are a great way to use those ingredients that you may have from earlier camp meals….banana, marshmallows, and chocolate bars or chips.
They are super easy…just split the banana with a sharp knife. Place about a half a chocolate candy bar broken into squares of as many chocolate chips as desired into the split. Then cut large marshmallows into quarters and place them or mini-marshmallows into the split as well.
Place in the middle of a large rectangle of heavy duty aluminum foil. Pull up sides of foil until they meet in the middle. Fold over to one side and continue to fold down until it reaches the top of the banana stem. Close and fold over both ends toward the middle.
Place foil packets in coals of fire that are still very warm, but not too hot. Cook for about 3 – 5 minutes…really, it depends on temperature of coals…until chocolate and marshmallows have melted.
You can also make them at home in your oven. Just preheat the oven to 350 and place them either directly on the rack or on a baking sheet for a few minutes.
