I was searching for a recipe that would utilize baked beans and hot dogs, could be made in a slow cooker, be inexpensive and easy, but be more than just beanie wienies when I found several versions of this recipe. Most of the recipes called for the cornbread topper to be made from scratch, but I decided to use a boxed corn muffin mix to simplify it even further. I needed the recipe to be as simple as possible for a cooking demonstration at the food pantry I help run. Plus, I needed to keep the overall cost as low as possible. The cornbread muffin mix was approximately 50 cents a box while the cost of buying cornmeal, flour, baking powder, etc. could be several dollars.
This casserole is easy to make in a crockpot (slow cooker), but it can be cooked in a 350 degree F oven instead. The crockpot is great if you have a few hours until dinner, but it works great in the oven if you’re pressed for time.
