What do you get when you cross a broccoli chicken casserole with a green bean casserole? I call it Crispy Onion Broccoli Chicken Casserole.
My family loves green bean casserole. They also really like crockpot chicken broccoli noodles. So, I made a hybrid casserole of them both. While I used homemade cream of mushroom soup, I saved time and effort by using store-bought egg noodles and rotisserie chicken breasts.
Crispy Onion Broccoli Chicken Casserole
Ingredients
- 6 to 8 oz. dried egg noodles
- 2 cooked chicken breasts, cut into bite-size pieces
- 10 to 12 oz. frozen broccoli florets
- 8 oz. canned mushroom slices or cooked fresh equivalent
- 2 1/2 c.+ cream of mushroom soup (prepared, not condensed)
- 1 1/2 c. +/- crispy fried onions
Instructions
- Prepare egg noodles according to package directions and drain them.
- Preheat oven to 350 degrees.
- Spray a 9X13 baking dish with oil or non-stick cooking spray.
- Combine noodles, chicken breasts, mushrooms, and soup and place in the baking dish.
- Bake for 30 minutes or until hot and bubbly.
- Top with fried onions and bake for an additional 5 minutes.
