Whether you call it stewed rhubarb, rhubarb compote, or any other name, this simple, delicious preparation of rhubarb reminds me of my mom. She just called it cooked rhubarb. She often made it from the fresh rhubarb in my parents yard or what she had frozen during the growing season. In fact, she often served it with biscuits in the fall and winter months.
Today would have been my mom’s birthday. So, I decided to make cooked rhubarb in her honor. However, I had some heat and serve bread that needed used…thus, no homemade biscuits. My biscuits are not as good as Mom’s anyway.
Although she never used a recipe, she did teach us to make it. Today, I actually measured everything this time to be able to share it with you. It is a very simple dish.
